Cashew Crema
This recipe is a crowd-pleaser and incredibly easy to make. Cashew Crema is a versatile delight that can elevate any dish! Say goodbye to mayo, creamy dressings, sour cream, yogurt sauces, and white sauce. If you're like me and prefer dairy-free options, this dressing will become your new best friend. The best part? It's a homemade gem you won't find in stores.
Save some cash by purchasing broken cashews instead of whole ones, as you'll be blending them anyway. Let's appreciate the hard work of the dedicated cashew pickers who hand-harvested and prepared each nut.
CASHEW CREMA INGREDIENTS:
1 pound of raw cashew nuts (approximately 2 cups)
1/2 tablespoon of coarse salt
1/2 cup of Olive Oil or Avocado Oil
Juice from 2-4 lemons or limes
OPTIONAL ADD-INS:
Small package of fresh dill, thyme, rosemary, cilantro, or parsley
1-2 heads of garlic
1/4 cup of nutritional yeast
Bragg's Liquid Aminos (to taste)
HOW TO MAKE IT:
Place cashews in a large jar and cover them with water. Let them soak for 8 hours or overnight in the refrigerator. (You can skip this step and use boiling water for 30 minutes if you have a high-powered blender such as a Vitamix).
In a powerful blender or food processor, combine all ingredients except the cashews. Blend until you achieve a delicious oily mixture.
Drain the soaked cashews and add them to the blender. Pour in just enough filtered water to just cover the cashews.
(Consistency is key here! 😉)Blend on high until the mixture becomes super smooth. You may need to scrape down the blender or add more water to facilitate blending.
Taste the cashew crema and adjust the salt or nutritional yeast if desired. Blend well after making any additions.
Transfer the creamy mixture into an airtight container and refrigerate. As it chills, the Cashew Crema will thicken, making it perfect for a range of creamy dressings.
Get creative! This Cashew Crema serves as an excellent base for any creamy dressing. For a Caesar dressing, try adding more garlic and lemon juice. If you prefer a Mexican dressing, incorporate onion and cilantro.
