Plant-Powered Recipe of the Day:
The Best Vegan Gluten-Free Pancakes
Ingredients
1 medium ripe banana (brown and spotty preferred)
1 1/2 tablespoons olive, avocado, or melted coconut oil (plus a little more for cooking)
1 1/2 tablespoons maple syrup (Grade A recommended)
2 teaspoons baking powder
1/4 teaspoon sea salt
1 - 1 1/4 cups non-dairy milk (plain unsweetened almond milk recommended)
3/4 cup gluten-free oat flour* (grind from rolled gluten-free oats)
3/4 cup gluten-free flour blend (DIY blend recommended)
1/4 cup almond flour (not almond meal, or substitute more gluten-free blend)
1/4 cup vegan dark chocolate chips or fresh or frozen fruit (optional)
Instructions
In a mixing bowl, mash the banana. Then add oil, maple syrup, baking powder, and salt. Whisk to combine.
Add non-dairy milk (start with the lesser amount and adjust as needed) and whisk to combine. If using coconut oil and it hardens or clumps, microwave it for 45 seconds to 1 minute to remelt.
Add oat flour, gluten-free flour, and almond flour. Gently stir to combine, being careful not to over-mix. The batter should be thick but pourable/scoopable. Adjust the consistency by adding more gluten-free or almond flour if too thin, or a little more non-dairy milk if too thick.
If desired, fold in vegan dark chocolate chips or fresh/frozen fruit.
Heat a large nonstick skillet, griddle, or cast-iron skillet over medium heat. Rub the skillet with a little oil. Adjust the heat to medium-low/low once it's hot to prevent burning the pancakes.
Spoon 1/4 - 1/3 cup of batter onto the skillet. Cook until the surface of the pancakes has bubbles and the edges appear dry (around 2-3 minutes). Carefully flip the pancakes and cook until browned on the underside (around 3 minutes more). Adjust the cooking time as needed for a nice golden brown color.
Transfer the cooked pancakes to a baking sheet or plate, avoiding stacking them on top of each other. Keep them warm in a 200°F (94°C) oven.
Continue cooking the remaining batter, making approximately 12 pancakes.
Serve the pancakes on their own or with toppings such as additional fruit, chocolate chips, peanut butter, or maple syrup.
Store cooled leftover pancakes (without toppings) in a container separated with wax or parchment paper to prevent sticking. They can be refrigerated for up to 4 days or frozen for up to 1 month. Reheat in the toaster oven, microwave, or oven until hot.
