Plant-Powered Recipe of the Day
Soulful Minestrone Magic
Ingredients:
4 tablespoons extra-virgin olive oil
2 small onions, chopped
3 celery stalks, chopped
Large piece of fresh Turmeric, minced or grated
1 head of garlic, minced
1 pound potatoes, cut into bite-size pieces
28-ounce can of crushed tomatoes (fire-roasted for that extra zest)
1 cup chopped fennel (including stalks, fronds, and bulb)
1/4 bunch of Italian parsley, chopped
1 small bunch fresh Basil, chopped
15-ounce can of Butter beans or Fava beans, rinsed & drained
15-ounce can of Cranberry beans or Red kidney beans, rinsed & drained
Half a 15-ounce can of Chickpeas, rinsed & drained
Water

Instructions:
In a large pot, heat the extra-virgin olive oil over medium heat. Add the chopped onions and celery. Sauté until they turn translucent and fragrant, creating a flavorful foundation.
Incorporate the minced or grated Turmeric, infusing the soup with its vibrant hue and potent goodness. Stir it gently, letting the aroma unfold.
Toss in the minced garlic, releasing its aromatic essence into the pot. Savor the fragrant dance of flavors.
Add the bite-sized potatoes, offering substance and heartiness to your minestrone. Let them mingle with the other ingredients, absorbing the essence of the soup.
Open the can of crushed tomatoes and pour them into the pot, allowing their rich, fire-roasted essence to enhance the base. Be mindful not to drain the can, as the velvety texture of the tomatoes adds depth to each spoonful.
Introduce the chopped fennel, infusing a touch of delicate anise-like notes. Let it intermingle, creating harmonious layers of taste.
Sprinkle the chopped Italian parsley and fresh Basil into the pot, adding their verdant essence and herbal undertones to the medley.
Time to invite the beans to the party! Add the rinsed and drained Butter beans or Fava beans, along with the Cranberry beans or Red kidney beans. These legumes bring substance, protein, and a delightful textural contrast to the soup.
Include half a can of rinsed and drained Chickpeas, bestowing a nutty creaminess and further enriching the minestrone experience.
Pour enough water into the pot to cover the ingredients, allowing them to swim in a nourishing broth. The precise amount will depend on your desired consistency, so adjust accordingly.
Sprinkle a pinch of salt, enhancing the flavors and bringing out the best in each ingredient. Taste as you go and adjust the seasoning to your preference.
Bring the pot to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, allowing the flavors to meld together in a comforting symphony.
